Servings: Serves 2.
Boil noodles in salt water for 1-2 minutes. Then remove from heat and pour out water, and place aside in cold water bath. This prevents the noodles from disintegrating later.
Slice chicken into thin slices. Mix in with the slices:
Saute chicken in 1-2 tbsp. oil (not sesame) until done (do not brown).
Saute noodles in the oil left over from chicken (or add back up to 1 tbsp.). Add in 1/4 can chicken broth, 1 tsp. salt. Cook for 1-2 min.
Add chicken back in with noodles. Sprinkle on pepper to taste. Add in optional green onion or dry ham. Cook another 2 min. (Total cooking time for noodles is about 3 min.)
