Grilled Chicken Parmesan

Preheat oven to broil. Slice the mozzarella into thin slices.

Saute the garlic, onion, and a sprinkling of red pepper flakes with olive oil in a saucepan on medium low heat until tender. Add the fire-roasted tomatoes and basil/oregano. Taste and adjust spices as needed.

Meanwhile, sprinkle the chicken with coarse salt and pepper and rub with some olive oil. Grill or saute in a pan for several minutes until cooked.

Pour half of the tomato mixture on the bottom of a baking pan. Spread the chicken over the sauce and top with the remaining tomato mixture. Sprinkle on parmesan cheese, and cover the top with the mozzarella slices. Broil the dish under the (ajar) broiler until the cheese bubbles.
