Preheat the oven to 340 degrees.
Lightly fry pork chops in butter and transfer to a baking pan.
Add a little more butter to the frying pan, and lightly warm the garlic (don't let it brown). Add mustard and apple juice, and stir constantly. Add the heavy cream (or sour cream), salt, and pepper. If more sauce is desired, add more of the ingredients. Taste and adjust flavors. If it needs a little acidity you can add a few drops of lemon juice or vinegar.
Pour on top of the pork chops and bake in a 340 deg F oven for about 30 minutes. If there is hardly any fat on the pork chops you need to be careful not to let them dry up too much. If they are fatty you don't need to worry about that and you can bake them for a much longer time. Make sure they are fully cooked by cutting a slot in the thickest chop and peeking inside.
